I can't watch the video because my speakers aren't working, but I think the answer is simple. It's because when people are anonymous, they lose all accountability. They are on their worst behavior, and everything goes downhill.
But the question was about "stimulating" conversations. I'd prefer "honest" to stimulating.
The video is largely about the "nature" of the Big Other. And as democtrated in the video, honesty often conflicts with intimacy, so we're seldom "completely" honest with actual people with whom we share intimacy, or even a casual acquaintance. When the "gaze" is on us... we become social "actors".

Plus, "stimulating" indicates an effort to impress, in my opinion. Again, honesty is better.
